I once argued with a white dude about why ‘people of color’ was better than ‘colored people.’ Short answer: BECAUSE WE SAID SO.
I once said “colored people” in mixed company. Everyone thought it was hilarious. I just really don’t know a better way to describe people of other races (when referring to multiple ethnic groups, at least).
